One-pot creamy nduja pasta

A quick and indulgent one-pot pasta dish featuring spicy nduja, olives, and a creamy mascarpone sauce. Perfect for a busy weeknight with minimal washing up.

  • 2 tbsp olive oil
  • 1 red onion finely chopped
  • 2 garlic cloves grated
  • 2 tbsp nduja
  • 65 g green olives roughly chopped
  • 200 g cherry tomatoes halved
  • 400 g mafalda pasta
  • 1 litre hot vegetable stock
  • 4 tbsp mascarpone
  • 50 g parmesan grated (plus extra to serve)

Pour the olive oil into a large casserole dish with a tight-fitting lid and heat over medium heat.

Add the red onion and garlic, cooking for 10 minutes until softening and golden at the edges.

Stir in the nduja and let it caramelize for a few minutes, then add the green olives and tomatoes.

Season well with salt and pepper and cook for an additional 5-6 minutes until the tomatoes blister.

Lay the pasta on top of the sauce and pour in the vegetable stock.

Bring to the boil, reduce to a simmer, cover with the lid, and cook for 15 minutes, stirring well after 5 minutes.

When the pasta is al dente, stir in the mascarpone and parmesan.

Season to taste and serve with extra parmesan scattered on top.
