Air fryer apple pancakes
Rustle up these easy apple pancakes in your air fryer. This simple recipe is great for a special breakfast, or dessert served with ice cream.

- neutral oil for the tin
- 150 g self-raising flour
- 0.5 tsp baking powder
- 2 tsp caster sugar
- 1 egg
- 200 ml milk
- 1 apple cored and very thinly sliced
- berries and maple syrup (or ice cream, to serve (optional))

Oil an 18cm cake tin and preheat the air fryer to 200C. Mix the flour, baking powder, sugar and a pinch of salt in a large bowl. Crack the egg into a jug and whisk with the milk.
Create a well in the centre of the flour, then add the milk mixture. Stir until just combined. Pour a quarter of the batter into the prepared tin, starting from the outside in, so there isn’t too much batter in the centre. Lay over a couple of apple slices and carefully place into the basket of the air-fryer. Cook for 3-4 mins, until golden and a skewer inserted into the centre comes out clean.
Keep warm under foil and a tea towel while you cook the remaining pancakes. Serve with berries and maple syrup drizzled over the top, or a scoop of ice cream, if you like.
