Beef, green olive & sumac koftas
Spiced beef koftas with green olives and pistachios, served with a refreshing cucumber and pomegranate salad. An ideal sharing dinner that is freezable and gluten-free.
Ingredienser
- 800 g 12% fat beef mince
- 2 garlic cloves grated
- 100 g green olives pitted and roughly chopped
- 50 g pistachios roughly chopped
- 2 tsp sumac
- 1 tbsp ground cumin
- 2 tsp ground coriander
- 0.5 tsp ground cinnamon
- 1 tsp mild chilli powder
- 2 tbsp olive oil plus extra for frying
- 1 tsp salt
- black pepper to taste
- 1 red onion sliced
- 1 lemon juiced
- 1 whole cucumber deseeded and finely sliced
- 2 large handfuls of parsley leaves
- 50 g pomegranate seeds
- pinch of sumac
- 1 tbsp honey for glazing
- hummus to serve
- pickled chillies to serve
- flatbreads to serve

Mix together all the kofta ingredients (beef, garlic, olives, pistachios, spices, olive oil, salt, and pepper) in a large bowl.
Roughly form the mixture into 24 koftas using about 40g for each.
To make the salad, scrunch the red onion and lemon juice together with a pinch of salt and set aside for 10 minutes to lightly pickle.
Mix in the cucumber, parsley, and pomegranate seeds to the onion mixture, season to taste, and sprinkle over the sumac.
Heat olive oil in a large frying pan or griddle pan over medium-high heat.
Fry the koftas in batches, turning often for 5-7 minutes until browned all over.
Pour in 200ml water, cover with a lid, turn the heat up to high, and cook for 5-7 minutes until cooked through and the water has evaporated.
Remove from heat and stir in the honey, tossing to coat.
Spread hummus on a serving platter, pile over the koftas, and serve with the salad, pickled chillies, and flatbreads.
