Air fryer veggie sausage casserole

A low-calorie vegetarian casserole made with veggie sausages, borlotti beans, and roasted red peppers, cooked quickly in an air fryer.

Ingredienser

  • 4-6 vegetarian sausages
  • 1 red onion chopped
  • 1 tbsp vegetable or olive oil
  • 400 g can chopped tomatoes
  • 3 roasted red peppers from a jar sliced
  • 400 g can borlotti or cannellini beans
  • 1 tsp red wine vinegar
  • dash Worcestershire sauce (or vegetarian alternative)
  • 1 tsp mixed dried herbs

Heat the air fryer to 180C.

Put the sausages in the air fryer and cook for 5 mins.

Coat the onion in the oil, then add to the air fryer and cook for a further 5 mins.

Combine all the ingredients in either a heatproof dish or remove the base of your air fryer basket and cook directly in the drawer.

Season with salt and pepper.

Cook for 20 mins until the sausages are cooked through and the sauce has thickened a little.

Serve with a grinding of black pepper.
