Sweetcorn confetti salad

A vibrant and summery salad made with sweetcorn, colorful peppers, and a zesty lime dressing, perfect for barbecues.

Ingredienser

  • 300 g sweetcorn cobs kernels only (prepared weight)
  • 1 red pepper finely chopped
  • 1 orange or yellow pepper finely chopped
  • 1 small red onion finely chopped
  • handful of cherry tomatoes quartered
  • small handful of coriander chopped
  • 1 lime juiced
  • 1 tbsp extra virgin olive oil
  • 0.5 red chilli finely chopped (optional)

Cut the sweetcorn kernels off the cobs and tip into a large mixing bowl.

Add all the peppers, chopped red onion, tomatoes, and coriander to the bowl.

In a small bowl or jug, whisk together the lime juice, olive oil, a pinch of salt, and some black pepper.

Stir in the chopped chilli, if using.

Pour the dressing over the salad and toss everything together until well coated.

Leave to stand in the fridge for 15–20 mins to let the flavours mingle, or serve immediately at room temperature.
